Non-Dairy/Vegan Ice Cream Recipe

A few days before the 4th of July means we have officially made it to summer! With the summer heat gearing up, ice-cream always sounds like a good idea. However, always sounds like a good idea and always is a good idea are two separate things- especially where the waistline and wallet are involved. Well, I gotchu. Being an avid ice-cream lover (addict seems too strong a word...) I needed a cheap way to make a natural & refined sugar free frozen treat that wasn't going add on unwanted lbs, if I ate more than a single person's fair share. Three base ingredients and whatever additions you want :)

-2 frozen bananas (preferably ripened for get a sweeter taste)

-1 can coconut cream

-1/4 tsp vanilla extract

-optional: any additions to fit your ice cream mood (handful of chocolate chips, scoop of nut butter, peppermint extract- use about 1/8 tsp-, nuts, couple tbsp coco powder...)


Method

1) Blend frozen bananas, the coconut cream (separated from the water in the can), vanilla extract, and any additions. You may need to use a little bit of the coconut water to help the blending process. Conversely, you can use up to a 1/4 cup milk of your choice or cold brew to help the blending.

2) Pour into freezer safe container and freeze until ice-cream texture is reached (dependent on your freezer's temperature)

3) Store in freezer
