Ridiculously Easy Fruit Cobbler

This is by far the easiest pie shaped thing I have made. I typically make it for a quick dessert or to bring to a party. I love it because it is so versatile and tastes great no matter what fruit you put in it (maybe not watermelon though...). My boyfriend and I like to pick berries and peaches in the summer on Sauvie Island (Portland, OR) and apples and pears in the fall. What do we do besides eat our body weight in fruit on the drive home? Make a cobbler with our fruit loot! Not only does making a delicious cobbler use up the poundage of fruit picked, it obviously tastes really great. So pick your favorite fruit (try for what's in season!) and bring this wholesome cobbler to your next party...even if that party is a party of one binge watching The Chilling Adventures of Sabrina on Netflix :0)


Elements

For the filling:

-6-8 cups of fruit (dependent on fruit size)

-1 lemon, juiced

-1/4 cup maple syrup


For the crumble crust:

-1 cup oat flour (to make- just put oats in blender and blitz)

-1 cup rolled oats

+optional: 1/2cup chopped pecans

-1/3cup melted coconut oil

-1/2 cup maple syrup


Method

1) Preheat oven to 350F

2) In a bowl: mix oat flour, oats, pecans, coconut oil, and maple syrup

3) Add in fruit, lemon, and maple syrup. Stir so that everything is well incorporated

4) Transfer to baking dish. Bake for 45-50min (time will be somewhat dependent on baking dish size & shape)
