Refined Sugar Free & Dairy Free Caramel Recipe

For when the sweet tooth strikes!...Or literally any time. Where are my salted caramel lovers out there?! This caramel copycat has been approved by both my very large dude housemates that eat decidingly "normal" things (gluten-free, does that mean you're eating cardboard for the rest of your days? How can you milk a coconut?). That being said, they both appreciate real caramel. So take it for what it's worth that they both approve of this refined sugar free and dairy free copycat. Normally, I'll keep a jar of it in the fridge. Sometimes I dip dark chocolate squares in it, maybe top some pancakes with it, dollop it on some sheep/goat cheese, package it in little wrappers and store them in the freezer as gifts (and as a way to not eat the entire jar myself), and sometimes I'll use it in another sweet recipe (like the one here). But mostly I just eat it straight with a spoon. Let's be real. Regardless of how you choose to devour it, it's there when you need a lil somethin' somethin' sweet.


-1/2 cup unsweetened sunflower seed butter

-1/2 cup maple syrup

-1/3 cup coconut oil, melted

-2 tsp vanilla

-1 tsp salt


1) Mix all ingredients together

2) Pour in container and put in the fridge to let set

3) Store in fridge
