No-Bake, Gluten-Free, Dairy-Free, Refined Sugar-Free Salted Caramel (Chocolate) Blondie Bars

I had to cut these into squares and store them in my freezer because I was eating too many of them from the get go. They are the perfect amount of sweetness, thanks to the dates in the crust and the salted caramel layer. They aren't too sweet that you feel sick after eating one, two, or three too many :) but sweet enough when you need a little (or a lotta) goodness. Enjoy & may you be better at taking food pictures than I!


Elements

Base

-1/2 cup walnuts

-1/2 cup macadamia nuts

-6 tbsp cacao powder (or chocolate flavored collagen/protein powder of choice)

-1 cup pitted dates


Caramel Layer

-1/2 cup unsweetened sunflower seed butter

-1/2 cup maple syrup

-1/3 cup coconut oil

-2 tsp vanilla

-1 tsp salt


Optional Chocolate Top

-7oz chopped dark chocolate or chocolate chips (I like the Enjoy Life brand)

-2 tsp milk of choice


Note: I did not have any milk on hand to mix with the melted chocolate, so the above chocolate layer looks less smooth and creamy here than it normally would

Method

1) Blitz together the base layer ingredients in a food processor. Press into a deep container.

2) Blend together caramel layer ingredients and pour over base. Smooth to cover entire base layer. Put in freezer to set, at least 45 minutes.

3) If doing a chocolate top layer, melt chocolate with milk. Stir to get smooth consistency and pour over other two layers- after at least 45 minutes!

4) Store in fridge or freezer.
