Freezable Mock Reeses Cups

These are awesome and perfect for when that sweets craving hits, but without nasty and artificial ingredients that will send you to the dentist. Singularly filling and made with quality ingredients, these cups won't spike your blood sugar and send you into a downward spiral with chocolate peanut butter goodness tunnel vision only to leave you with empty wrappers and in a sugar coma. If peanut butter doesn't agree with you, swap for a nut/seed butter that does. Make sure to choose a nut/seed butter that does not contain added sugar or hydrogenated oils- only the nut/seed, and maybe some salt!


Elements

-1/3 cup unsweetened cocoa powder

-1/3 cup coconut oil melted

-1/3 cup maple syrup

-3/4 cup smooth PB or alternative nut butter (more/less depending on taste preference)

-Paper muffin sheets (not a big deal if you don't have them, just makes them a little easier to eat)

-Baking sheet or muffin pan


Method

1) Combine all ingredients except PB in blender (or whisk in deep bowl if you don't have a blender)

2) Line baking sheet with paper muffin sheets

3) Drop about 1tsp of chocolate mixture into each liner (try to flatten it out- lift and gently drop the paper to help the chocolate settle)*

4) Scoop PB on top of chocolate (about 3/4tsp- add more if you want a larger PB center)

5) Add another 1tsp of chocolate mixture on top of PB layer for each (again try to flatten it out)

6) Freeze for at least 20 min to harden the chocolate

7) Store in freezer


*Play with the proportions of chocolate to PB. Feel free to customize the size of cup to make them larger or smaller, depending on your serving size preference. Just don't make them huge and eat all of them at once!
