Chewy Creamy Chocolate Coconut Bars

Because of my love and extreme weakness for dark chocolate and creamy coconut, I look to find ways of consuming them without excessive sugar. Hence the birth of these uber rich creamy chocolate coconut bars. For the entire batch, there is only two tablespoons of added sugar (in the form of maple syrup and coconut sugar). But be warned, they are VERY rich and it might not catch up with you until you eat half the batch!


-.5 cup coconut cream

-1.5 cup shredded coconut

-1 tbsp coconut sugar

-1 tbsp coconut sugar

-1tbsp maple syrup

-1tbsp vanilla

-4tbsp coconut oil (melted)

-pinch o salt

- large handful of dark chocolate chips (I like EnjoyLife dark chocolate morsels because they do not contain emulsifiers)


1) Mix together all ingredients except dark chocolate chips, folding with a spatula to get an even texture.

2) Press mixture into shallow container (I used a shallow glass container with a snap lid for easy fridge storage).

3) In a separate microwave safe bowl, melt the dark chocolate chips (3 x 30sec. stirring in between each interval).

4) Pour melted dark chocolate over coconut mixture.

5) Refrigerate until firm (at least an hour) & store in refrigerator.
