Around the Clock Flourless Brookies

My original name for these fudgey morsels was something to do with them being breakfast brownies. When I realized that I was eating them for quick on-the-go breakfasts, snacks, and dessert, the name was promptly changed. "Around the Clock"- duh. "Brookies" = brownie + cookie- because my house smelled like Tollhouse chocolate chip cookies as these were baking and because there's a cookie-like crunch on the top of these guys when they are finished. They hold up nicely for travel and they have been boyfriend (a self-proclaimed brownie aficionado) approved!


Elements

-1 cup unsweetened nut butter (I used sunflower seed butter)

-1/2 cup pure maple syrup

-1 egg (preferably cage-free or free-range)

-1 tbsp butter (preferably grass-fed)

-1 scoop vanilla collagen powder

-1/4 cup chocolate chips

-1/4 cup unsweetened cocoa powder

-1/2 tsp baking soda


Method

1) Preheat oven to 325 F

2) Mix all ingredients in a large bowl. Transfer to baking pan or cookie sheet.

3) Bake for 20-30 minutes

4) Let cool and store in fridge (makes them fudgey!)
